- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 2 cloves garlic, minced
- 2 tbsp butter
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a pan, melt butter over medium heat. Add mushrooms and garlic, sauté until soft.
- Remove from heat and mix in mozzarella, Parmesan, thyme, salt, and pepper.
- Cut a pocket into each chicken breast and stuff with the mushroom mixture.
- Secure with toothpicks if needed.
- Heat olive oil in an oven-safe pan over medium-high heat.
- Sear chicken for 2-3 minutes per side until golden.
- Transfer pan to the oven and bake for 20-25 minutes or until chicken is cooked through.
- Let rest for 5 minutes before serving.

- Adjust cheese amounts to your preference.
- Check chicken internal temperature reaches 165°F (74°C).
