A light and fluffy Chantilly cake made with layers of sponge cake, whipped cream, and fresh berries.

Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup whole milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  2. In a bowl, whisk flour, sugar, baking powder, and salt.
  3. Add butter, milk, eggs, and vanilla. Beat until smooth.
  4. Divide batter evenly between pans. Bake for 25-30 minutes or until a toothpick comes out clean.
  5. Let cakes cool completely. Whip cream with powdered sugar until stiff peaks form.
  6. Place one cake layer on a plate. Spread half the whipped cream on top, then add half the berries.
  7. Place second cake layer on top. Cover with remaining whipped cream and berries.
  8. Chill for at least 1 hour before serving.

Notes

  • Use room-temperature butter and eggs for best results.
  • Chill the mixing bowl before whipping cream.
  • Replace berries with other seasonal fruits if desired.
