- 1/2 ounce dried carrageen moss
- 4 cups milk
- 1/4 cup sugar (or to taste)
- 1/2 teaspoon vanilla extract (alcohol-free)
- Pinch of salt
Instructions
- Rinse the carrageen moss thoroughly under cold water to remove any impurities.
- In a medium saucepan, combine the rinsed carrageen moss and milk.
- Bring the mixture to a gentle simmer over medium heat, stirring occasionally.
- Reduce the heat to low and continue to simmer for about 15-20 minutes, or until the moss has dissolved and the mixture has thickened slightly.
- Remove the saucepan from the heat.
- Strain the mixture through a fine-mesh sieve into a clean bowl, pressing down on the moss to extract all the liquid. Discard the solids.
- Stir in the sugar, vanilla extract, and salt until dissolved.
- Pour the pudding into individual serving dishes or a large bowl.
- Chill in the refrigerator for at least 2-3 hours, or until set.
Notes
- For a richer pudding, use whole milk or add a splash of cream.
- Adjust the amount of sugar to your preference.
- Serve chilled, optionally with a sprinkle of cinnamon or a dollop of fruit compote.
