  • 1/2 cup heavy cream (for caramel sauce)
  • Pinch of salt (for caramel sauce)
  • 1 cup crushed toffee pieces
  • 1/4 cup chopped pecans (optional)
  • 1 1/2 cups unsalted butter, softened (for frosting)
  • 4 cups powdered sugar (for frosting)
  • 1/4 cup caramel sauce (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 2 tbsp heavy cream (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Whisk flour, baking powder, baking soda, and salt in a bowl. Set aside.
  3. Beat softened butter and granulated sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Alternate adding dry ingredients and buttermilk to the butter mixture, starting and ending with dry ingredients.
  5. Divide batter evenly between pans. Bake for 25-30 minutes. Cool in pans for 10 minutes, then transfer to wire rack.
  6. Make caramel sauce by heating sugar until amber, stirring in butter, cream, and salt. Cool slightly.
  7. Beat butter for frosting until creamy. Add powdered sugar, caramel sauce, vanilla, and cream until smooth.
  8. Assemble cake with frosting, caramel drizzle, and toffee pieces between layers and on top.
  9. Optional: Sprinkle pecans on top for extra crunch.
