  • 1 pound smoked beef sausage, cut into 1-inch pieces
  • 1 large onion, quartered
  • 6 cloves garlic, smashed
  • 1/2 cup Cajun seasoning blend (store-bought or homemade)
  • 1/4 cup lemon juice
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon hot sauce (optional, for extra heat)
  • 8 cups water or chicken broth
  • Salt to taste
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a large stockpot or Dutch oven, combine water or chicken broth, onion, smashed garlic, Cajun seasoning, lemon juice, apple cider vinegar, and hot sauce (if using). Bring to a rolling boil over high heat.
  2. Add the red potatoes to the boiling liquid. Cook for 10-15 minutes, or until they are fork-tender.
  3. Add the corn and smoked beef sausage to the pot. Continue to boil for another 5-7 minutes, or until the corn is tender-crisp.
  4. Stir in the shrimp. Cook for 2-4 minutes, or until the shrimp turn pink and opaque. Do not overcook.
  5. Remove the pot from the heat. Carefully drain the liquid, or use a slotted spoon to transfer the shrimp, potatoes, corn, and sausage to a large serving platter.
  6. Season with additional salt to taste if needed. Garnish with fresh chopped parsley and serve immediately with lemon wedges.
