These Irish potato pancakes are crispy on the outside and tender on the inside. They are versatile and can be served with various toppings.

Ingredients

  • 1 1/2 cups grated raw potatoes (about 2 medium)
  • 1 1/2 cups mashed cooked potatoes (about 2 medium)
  • 1/2 cup all-purpose flour
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • Pinch of black pepper
  • 2 tablespoons butter or oil, for frying

Instructions

  1. Squeeze excess water from the grated raw potatoes using a clean kitchen towel.
  2. In a large bowl, combine the grated raw potatoes, mashed cooked potatoes, flour, milk, salt, and pepper. Mix until just combined. Do not overmix.
  3. Heat butter or oil in a large skillet over medium heat.
  4. Drop 1/4 cup of the potato mixture per pancake into the skillet, flattening slightly with the back of a spoon.
  5. Cook for 4-5 minutes per side, or until golden brown and cooked through.
  6. Serve warm with your favorite toppings.

Notes

  • For a crispier boxty, use a little more oil when frying.
  • You can add finely chopped chives or green onions to the batter for extra flavor.
  • Boxty can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or oven.
