Instructions
- Heat olive oil in a non-stick pan over medium heat.
- Whisk eggs, salt, and pepper in a bowl.
- Add chopped spinach to the pan and sauté for 1 minute.
- Pour the egg mixture over the spinach.
- Cook for 2-3 minutes until the edges set.
- Sprinkle cheese on top if using.
- Fold the omelette in half and cook for another 1 minute.
- Serve hot.
