Instructions
- In a bowl, mix chia seeds, almond milk, honey, vanilla extract, lemon zest, and lemon juice.
- Stir well and let sit for 5 minutes.
- Stir again to prevent clumping, then refrigerate for at least 2 hours or overnight.
- Once thickened, fold in Greek yogurt.
- Serve chilled with extra lemon zest or fresh berries.

- For a thinner consistency, add more almond milk.
