Ingredients

- 1 cup basmati rice
- 1 cup coconut milk
- 1 cup water
- 1 tablespoon coconut oil
- 1 teaspoon salt
- 1 pandan leaf (optional)
Instructions
- Rinse the rice until the water runs clear.
- In a pot, combine rice, coconut milk, water, coconut oil, salt, and pandan leaf.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 15 minutes.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff with a fork before serving.
Notes
- Use full-fat coconut milk for richer flavor.
- Adjust salt to taste.
- Pandan leaf adds aroma but can be omitted.
