  • 8 ounces chow mein noodles (fresh or dried)
  • 2 tablespoons soy sauce, plus more for seasoning

  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 large onion, thinly sliced
  • 2 carrots, julienned
  • 2 celery stalks, thinly sliced
  • 1 cup sliced cabbage
  • 1 cup bean sprouts
  • 4 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup beef broth
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sugar
  • 1/4 teaspoon white pepper

Instructions

  1. In a medium bowl, combine the sliced beef with 1 tablespoon soy sauce and cornstarch. Toss to coat and set aside for 15 minutes.
  2. Cook the chow mein noodles according to package directions. Drain and rinse with cold water to prevent sticking. Toss with 1 teaspoon sesame oil.
  3. Heat the vegetable oil in a large wok or skillet over high heat. Add the marinated beef and stir-fry until browned, about 2-3 minutes. Remove the beef from the wok and set aside.
  4. Add the onion, carrots, and celery to the wok. Stir-fry for 3-4 minutes until slightly tender-crisp.
  5. Add the cabbage, bean sprouts, and mushrooms. Stir-fry for another 2-3 minutes.
  6. Add the minced garlic and grated ginger. Stir-fry for 1 minute until fragrant.
  7. In a small bowl, whisk together the beef broth, remaining 1 tablespoon soy sauce, oyster sauce (if using), sugar, and white pepper.
  8. Pour the sauce mixture into the wok with the vegetables. Bring to a simmer.
  9. Add the cooked noodles and the reserved beef back into the wok. Toss everything together until well combined and heated through.
  10. Serve hot, garnished with extra sesame oil if desired.

Notes

  • For extra flavor, you can marinate the beef for longer, up to 30 minutes.
  • Adjust the amount of soy sauce and sugar to your taste.
  • Feel free to add other vegetables like bell peppers, snow peas, or broccoli florets.
