  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 2 tablespoons peanut oil, divided
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup bean sprouts
  • 4 scallions, cut into 2-inch pieces
  • 2 tablespoons oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 teaspoon sesame oil

Instructions

  1. In a bowl, combine the sliced beef with 1 tablespoon soy sauce, cornstarch, sugar, and white pepper. Marinate for at least 15 minutes.
  2. Heat 1 tablespoon peanut oil in a large wok or skillet over high heat until smoking. Add the marinated beef in a single layer and cook for 1-2 minutes per side until browned. Remove beef from the wok and set aside.
  3. Add the remaining 1 tablespoon peanut oil to the wok. Add the sliced onion and stir-fry for 1 minute until softened. Add the minced garlic and stir-fry for 30 seconds until fragrant.
  4. Add the fresh rice noodles to the wok. Stir-fry for 2-3 minutes, separating the noodles with your spatula, until they are heated through and slightly softened.
  5. Return the cooked beef to the wok. Add the bean sprouts and scallions.
  6. In a small bowl, whisk together the oyster sauce, dark soy sauce, and sesame oil. Pour the sauce over the noodles and beef.
  7. Stir-fry everything together for 1-2 minutes, tossing constantly, until the sauce is evenly distributed and the noodles are well coated.
  8. Serve immediately.

Notes

  • Use fresh wide rice noodles for the best texture. If using dried noodles, rehydrate them according to package directions before stir-frying.
  • Do not overcrowd the wok when cooking the beef; cook in batches if necessary to ensure proper browning.
