- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, chopped
- 1 (1.25 ounce) package taco seasoning
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15.25 ounce) can whole kernel corn, drained
- 1 cup shredded cheddar cheese
- 8 large flour tortillas
- Optional toppings: sour cream, salsa, guacamole
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and onion; cook until beef is browned and onion is tender. Drain off any excess fat.
- Stir in taco seasoning, black beans, and corn. Cook for 5-7 minutes, or until heated through.
- Warm the tortillas according to package directions (microwave or skillet).
- Spoon about 1/2 cup of the beef mixture onto the center of each tortilla.
- Sprinkle with shredded cheese.
- Fold in the sides of the tortilla, then roll it up tightly from the bottom.
- Serve immediately with optional toppings like sour cream, salsa, or guacamole.
Notes
- For a spicier burrito, add a pinch of cayenne pepper to the beef mixture.
- Leftover burritos can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
- To make ahead, prepare the beef mixture and store it separately. Assemble burritos just before serving.
