Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 (1.25 ounce) package taco seasoning
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 cup shredded cheddar cheese
  • 8 large flour tortillas
  • Optional toppings: sour cream, salsa, guacamole

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and onion; cook until beef is browned and onion is tender. Drain off any excess fat.
  2. Stir in taco seasoning, black beans, and corn. Cook for 5-7 minutes, or until heated through.
  3. Warm the tortillas according to package directions (microwave or skillet).
  4. Spoon about 1/2 cup of the beef mixture onto the center of each tortilla.
  5. Sprinkle with shredded cheese.
  6. Fold in the sides of the tortilla, then roll it up tightly from the bottom.
  7. Serve immediately with optional toppings like sour cream, salsa, or guacamole.
