  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the chicken breasts dry with paper towels.
  3. Prepare a breading station: In one shallow dish, place the flour. In a second shallow dish, whisk the eggs. In a third shallow dish, combine the breadcrumbs, 1/4 cup of grated parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper.
  4. Dredge each chicken breast in the flour, shaking off any excess. Dip it into the beaten eggs, letting any extra drip off. Finally, coat it thoroughly in the breadcrumb mixture, pressing gently to adhere.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the breaded chicken breasts for 2-3 minutes per side, until golden brown. This creates a crispy crust.
  6. Transfer the seared chicken breasts to the prepared baking dish.
  7. Spoon about 1/4 cup of marinara sauce over each chicken breast.
  8. Sprinkle the shredded mozzarella cheese and the remaining 1/4 cup of grated parmesan cheese over the sauce.
  9. Bake for 15-20 minutes, or until the chicken is cooked through (internal temperature reaches 165°F or 74°C) and the cheese is melted and bubbly.
  10. Garnish with fresh chopped parsley before serving.
