  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 tablespoon fresh chervil, chopped
  • 1 large egg, beaten (for egg wash)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  2. Gradually add the ice water, 1 tablespoon at a time, mixing until the dough just comes together. Do not overmix. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  4. On a lightly floured surface, roll out the chilled dough into a 12-inch round. Carefully transfer the dough to the prepared baking sheet.
  5. Arrange the asparagus spears in a single layer over the dough, leaving a 2-inch border around the edges.
  6. Crumble the goat cheese over the asparagus. Drizzle with olive oil and sprinkle with fresh thyme and chervil. Season with salt and pepper.
  7. Fold the edges of the dough over the filling, pleating it as you go, to create a rustic border.
  8. Brush the exposed crust with the beaten egg wash.
  9. Bake for 25-30 minutes, or until the crust is golden brown and the asparagus is tender-crisp.
  10. Let the galette cool slightly before slicing and serving.

  • For a richer flavor, you can brush the crust with a little melted butter before applying the egg wash.
  • Feel free to experiment with other herbs like dill or parsley.
