Ingredients

  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 1 tablespoon coconut oil
  • 1 teaspoon vanilla extract
  • 1/2 cup diced apple

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix oats, flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk honey, applesauce, coconut oil, and vanilla.
  4. Combine wet and dry ingredients. Fold in diced apple.
  5. Scoop dough onto baking sheet. Flatten slightly.
  6. Bake for 12-15 minutes until edges are golden.
  7. Cool on wire rack before serving.

  • Substitute maple syrup for honey if desired.
