- 1 1/2 pounds cooking apples (e.g., Bramley, Granny Smith), peeled, cored, and sliced
- 1/2 cup water
- 1/2 cup granulated sugar (or to taste)

- 2 tablespoons unsalted butter
- 3 large egg yolks
- 3 large egg whites
- 1/4 cup granulated sugar (for meringue)
- Pinch of cream of tartar
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9-inch pie dish.
- In a large saucepan, combine the sliced apples, water, 1/2 cup sugar, cinnamon, and lemon juice. Bring to a simmer over medium heat, then reduce heat to low, cover, and cook for 10-15 minutes, or until the apples are tender.
- Remove from heat and stir in the butter and egg yolks until well combined. Pour the apple mixture into the prepared pie dish.
- In a clean, dry bowl, beat the egg whites with an electric mixer on medium-high speed until foamy. Add the cream of tartar and continue beating. Gradually add the 1/4 cup sugar, one tablespoon at a time, beating until stiff, glossy peaks form.
- Spread the meringue over the apple filling, ensuring it touches the edges of the pie dish to prevent shrinking. You can create decorative swirls with the back of a spoon.
- Bake for 15-20 minutes, or until the meringue is golden brown.
- Let cool slightly before serving.
Notes
- For a richer flavor, you can add a splash of apple juice or cider to the apple filling.
- If you prefer a less sweet dessert, reduce the amount of sugar in the apple filling.
