Teriyaki chicken rice paper rolls are a fresh and light dish perfect for lunch or dinner. They combine tender teriyaki chicken with crisp vegetables wrapped in soft rice paper.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup teriyaki sauce
  • 8 rice paper wrappers
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/2 cup sliced cucumbers
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup sliced green onions
  • 1 tbsp sesame oil

Instructions

  1. Marinate the chicken in teriyaki sauce for 15 minutes.
  2. Cook the chicken in a pan with sesame oil until fully done, then slice thinly.
  3. Soak one rice paper wrapper in warm water for 10 seconds.
  4. Lay the wrapper flat and add chicken, lettuce, carrots, cucumbers, cilantro, and green onions.
  5. Fold the sides inward and roll tightly.
  6. Repeat for remaining wrappers and ingredients.
  7. Serve fresh or refrigerate for up to 2 hours.
