- 3 pounds sweet potatoes, peeled and cubed
- 1/2 cup unsalted butter, melted
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 2 cups mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- Boil sweet potato cubes in salted water until tender, about 15 minutes.
- Drain potatoes and mash until smooth.
- Mix in melted butter, brown sugar, eggs, vanilla, and salt.
- Spread mixture into a greased baking dish.
- Bake for 25 minutes.
- Sprinkle marshmallows evenly over the top.
- Return to oven and bake until marshmallows are golden brown, about 5 more minutes.
Notes
- You can prepare the sweet potato base a day ahead and refrigerate.
- For a crispier topping, broil for the final minute instead of baking.
