- 3 lbs beef chuck roast
- 2 tbsp olive oil
- 1 onion, chopped
- 4 carrots, sliced
- 3 potatoes, cubed
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp thyme
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Sear the roast on all sides until browned.
- Add onions, carrots, and garlic. Cook for 5 minutes.
- Pour in beef broth and season with salt, pepper, and thyme.
- Cover and simmer on low heat for 3 hours.
- Add potatoes and cook for another hour.
- Remove from heat and let rest for 10 minutes before serving.

- Use a heavy pot for even cooking.
- Check liquid levels occasionally.
- Let meat rest before slicing.
