Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tbsp melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup chopped pecans
  • 1/2 cup corn syrup
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Line an 8×8 baking pan with parchment paper.
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into pan to form crust.
  3. Bake crust for 10 minutes. Let cool slightly.
  4. Beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then 1 tsp vanilla.
  5. Pour cheesecake mixture over crust. Bake for 20 minutes.
  6. Mix pecans, corn syrup, brown sugar, and 1 tsp vanilla. Spread over cheesecake layer.
  7. Bake for 15 more minutes. Cool completely before cutting into bars.
