This colorful and easy poke cake can be made ahead of time and is perfectly on theme for any Fourth of July festivity. It’s easy to change up the colors for other holidays.

  • Total Time: 1 hour
  • Yield: 12 servings 1x

Ingredients

Scale
  • 1 box white cake mix
  • ingredients listed on the box (eggs, water, oil)
  • 2 (3.4 oz.) boxes instant cheesecake pudding
  • 3 1/2 cups milk
  • 2 1/2 cups heavy cream
  • 1/4 cup powdered sugar (or more to taste)
  • 1 teaspoon vanilla extract
  • Blue and red food coloring
  • Sprinkles for garnish

Instructions

  1. Preheat the oven to the temperature specified on the box. Grease a 9Γ—13 inches baking dish with baking spray and set aside.
  2. Prepare the cake mix according to the directions listed on the box.
  3. Divide the mixture into 3 equal portions. One portion stays white. Add red food coloring to the second portion and blue coloring to the third. Stir well until the color dissolves completely.
  4. Using a spoon, make small drops of each mixture in the bottom of the baking dish. Work quickly to prevent spreading. Drop one color at a time, spacing them a few inches apart, then repeat with the other colors until the pan is covered. Tap the dish to flatten the surface. Swirl the colors lightly with a toothpick.
  5. Bake as directed on the box. After baking, let the cake sit at room temperature for 10 minutes. Poke holes all over the cake with the handle of a wooden spoon and let it cool completely.
  6. Combine instant pudding and milk in a bowl, whisking until dissolved. Pour over the cooled cake, filling the holes. Spread remaining pudding on top and refrigerate to set.
  7. Whip chilled heavy cream and vanilla extract until soft peaks form. Add powdered sugar and whip until stiff peaks form. Spread over the pudding layer.
  8. Garnish with sprinkles before serving. Store leftovers in the fridge.

Notes

  • Use gel food coloring for vibrant colors.
  • Do not over-swirl the colors to maintain distinct layers.
  • Chill the heavy cream before whipping for best results.
