- 2 medium delicata squash, halved and seeded
- 2 tbsp olive oil
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped

- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Slice delicata squash into half-moons and toss with olive oil, salt, and pepper.
- Arrange squash on a baking sheet in a single layer.
- Roast for 20 minutes, flipping halfway.
- In a bowl, mix breadcrumbs, garlic, Parmesan, parsley, and thyme.
- Sprinkle breadcrumb mixture over roasted squash.
- Return to oven for 5-7 minutes until golden brown.
- Serve warm.
Notes
- Delicata squash skin is edible—no need to peel.
- For extra crispiness, broil for 1-2 minutes after adding breadcrumbs.
- Substitute gluten-free breadcrumbs if needed.
