Ingredients

  • 2 medium delicata squash, halved and seeded
  • 2 tbsp olive oil
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice delicata squash into half-moons and toss with olive oil, salt, and pepper.
  3. Arrange squash on a baking sheet in a single layer.
  4. Roast for 20 minutes, flipping halfway.
  5. In a bowl, mix breadcrumbs, garlic, Parmesan, parsley, and thyme.
  6. Sprinkle breadcrumb mixture over roasted squash.
  7. Return to oven for 5-7 minutes until golden brown.
  8. Serve warm.

Notes

  • Delicata squash skin is edible—no need to peel.
  • For extra crispiness, broil for 1-2 minutes after adding breadcrumbs.
