- 1 lb ground turkey
- 1 small onion, diced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 clove garlic, minced
- 1 cup frozen peas
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 2 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F.
- Brown ground turkey in a skillet over medium heat.
- Add onion, carrot, celery, and garlic. Cook until softened.
- Stir in peas, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
- Grease a cupcake pan and fill each cup halfway with the turkey mixture.
- Top with mashed potatoes and sprinkle cheese on top.
- Bake for 20 minutes or until golden brown.
- Let cool slightly before removing from the pan.
Notes
- Use leftover mashed potatoes for convenience.
- Swap ground turkey for beef if preferred.
- Freeze extras for quick meals later.
