Mini turkey shepherd’s pie made in a cupcake pan for easy serving and portion control.

Ingredients

  • 1 lb ground turkey
  • 1 small onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 clove garlic, minced
  • 1 cup frozen peas
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.
  2. Brown ground turkey in a skillet over medium heat.
  3. Add onion, carrot, celery, and garlic. Cook until softened.
  4. Stir in peas, tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  5. Grease a cupcake pan and fill each cup halfway with the turkey mixture.
  6. Top with mashed potatoes and sprinkle cheese on top.
  7. Bake for 20 minutes or until golden brown.
  8. Let cool slightly before removing from the pan.

Notes

  • Use leftover mashed potatoes for convenience.
  • Swap ground turkey for beef if preferred.
  • Freeze extras for quick meals later.
