Ingredients

  • 200ml water
  • 50g honey

Instructions

  1. Mix mascarpone, heavy cream, sugar, lemon zest, and vanilla extract until smooth.
  2. Boil water, honey, and lemon juice to make a syrup. Let it cool.
  3. Dip sponge fingers in the syrup and layer them in a dish.
  4. Spread half the mascarpone mixture over the sponge fingers.
  5. Repeat with another layer of soaked sponge fingers and mascarpone.
  6. Chill for at least 4 hours before serving.
