- 1 lb ground beef
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 egg
- 1/4 cup vegetable oil
- 1 can (15 oz) corn kernels, drained
- 1/2 cup shredded cheddar cheese
- 1 small onion, diced
- 1 clove garlic, minced
- 1 tsp chili powder
- 1/2 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a skillet over medium heat. Drain excess fat.
- Add onion, garlic, chili powder, and black pepper to the beef. Cook until onions soften.
- In a bowl, mix cornmeal, flour, baking powder, and salt.
- Stir in milk, egg, and vegetable oil until combined.
- Fold in corn kernels and shredded cheese.
- Spread beef mixture in a greased baking dish.
- Pour cornbread batter over the beef.
- Bake for 25-30 minutes until golden brown.
- Let cool slightly before serving.
Notes
- Use lean ground beef for less grease.
- Add diced bell peppers for extra flavor.
- Store leftovers in an airtight container for up to 3 days.
