- 2–3 tbsp water (as needed)
Instructions
- Mix the gluten-free flour and salt in a bowl.
- Make a well in the center and add the eggs and olive oil.
- Knead into a smooth dough, adding water if too dry.
- Roll the dough thinly on a floured surface.
- Cut into thin strips for noodles.
- Boil in salted water for 2-3 minutes until tender.
- Drain and serve with your favorite sauce.

- Use a gluten-free flour blend with xanthan gum for best results.
- Dough should be firm but not sticky.
- Fresh noodles cook quickly, so watch them closely.
