    • 2 cloves garlic, chopped
    • 3 tablespoons dry red wine (malbec recommended)
    • Pinch of cinnamon
    • Black pepper to taste
  • For the Grilled Cheese:
    • 4 slices sourdough bread (fresh, large slices)
    • 4 tablespoons unsalted butter, melted
    • ⅛ teaspoon dried thyme
    • ⅛ teaspoon dried rosemary
    • 7 oz white cheddar, shredded or 4 slices
    • 3 oz gruyere, shredded

Instructions

  1. For the Caramelized Onions:
    1. Heat olive oil over medium heat in a large pan or cast-iron skillet.
    2. Add sliced onions and cook, stirring often, until softened (about 20 minutes).
    3. Add butter and cook for another 20 minutes, stirring every 2-4 minutes.
    4. Mix in salt, sugar, cinnamon, and black pepper; cook for another 15 minutes.
    5. At the 12-minute mark, add chopped garlic.
    6. Deglaze with red wine, scraping the pan, and cook until wine reduces (2-3 minutes).
    7. Set onions aside.
  2. For the Grilled Cheese:
    1. Melt butter with rosemary and thyme in a microwave-safe dish.
    2. Brush butter mixture onto one side of each bread slice.
    3. Place two slices butter-side-down in the skillet; top with caramelized onions.
    4. Add white cheddar over the onions.
    5. Close sandwiches with the remaining bread, butter-side up.
    6. Cook on medium heat for 5 minutes until the bottom is golden.
    7. Preheat oven to broil.
    8. Transfer skillet to oven and broil until the top is golden (1-2 minutes).
    9. Sprinkle gruyere on top and return to oven until cheese melts (1-2 minutes).
    10. Cut in half, garnish with herbs, and serve hot.
