Ingredients

  • 1 cup masa harina (gluten-free corn flour)
  • 3/4 cup warm water
  • 1/2 tsp salt
  • 1 tbsp vegetable oil
  • 1 cup refried beans (vegan)
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced avocado
  • 1/4 cup vegan sour cream
  • 1/4 cup crumbled vegan cheese

Instructions

  1. Mix masa harina, warm water, salt, and vegetable oil in a bowl to form a dough.
  2. Divide the dough into 6 equal portions and shape each into a small disc.
  3. Heat a skillet over medium heat and cook each disc for 2-3 minutes per side until lightly browned.
  4. Pinch the edges of each disc to form a small rim.
  5. Spread refried beans on each sope.
  6. Top with shredded lettuce, diced tomatoes, sliced avocado, vegan sour cream, and crumbled vegan cheese.
  7. Serve immediately.

Notes

  • Use warm water for the dough to make it easier to shape.
  • If the dough feels dry, add a little more water.
  • Cook the sopes on medium heat to avoid burning.
