Instructions
- In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and cayenne pepper.
- Add corn kernels and stir until well coated.
- Fold in cotija cheese and cilantro.
- Season with salt to taste.
- Chill for at least 30 minutes before serving.
