- 6 cloves garlic, minced
- 2 tbsp olive oil
- 1 onion, chopped
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 4 slices crusty bread
- 1 cup grated Gruyère cheese
- 1 tbsp chopped fresh parsley
Instructions
- Heat olive oil in a pot over medium heat. Add garlic and onion, sauté until soft.
- Pour in vegetable broth, add thyme, bay leaf, salt, and pepper. Simmer for 15 minutes.
- Remove the bay leaf and blend the soup until smooth.
- Toast the bread slices until golden.
- Ladle the soup into bowls, top with toasted bread and grated Gruyère.
- Broil for 2 minutes until cheese melts. Garnish with parsley and serve hot.
Notes
- Use fresh garlic for the best flavor.
- Substitute Gruyère with any melting cheese if preferred.
- For a richer taste, add a splash of cream before serving.
