Ingredients

  • 1 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1/2 cup frozen peas and carrots

  • 1/4 tsp black pepper
  • 1 green onion, chopped (optional)

Instructions

  1. Heat oil in a pan over medium heat.
  2. Scramble the eggs and cook until just set. Remove from pan.
  3. Add rice to the pan and stir-fry for 2 minutes.
  4. Add frozen peas and carrots, garlic powder, and black pepper. Cook for 3 minutes.
  5. Return eggs to the pan. Add soy sauce and mix well.
  6. Garnish with green onion if desired. Serve hot.
