- 2 cups cooked rice (preferably day-old)
- 2 eggs
- 1 tbsp vegetable oil
- 1 tbsp soy sauce
- 1/2 cup frozen peas and carrots
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 1 green onion, chopped (optional)
Instructions
- Heat oil in a pan over medium heat.
- Scramble the eggs and cook until just set. Remove from pan.
- Add rice to the pan and stir-fry for 2 minutes.
- Add frozen peas and carrots, garlic powder, and black pepper. Cook for 3 minutes.
- Return eggs to the pan. Add soy sauce and mix well.
- Garnish with green onion if desired. Serve hot.

- Use cold rice for best texture.
- Adjust soy sauce to taste.
- Add protein like chicken or shrimp if desired.
