- 1 lb white fish fillets, cut into chunks
- 4 slices bacon, chopped
- 1 onion, diced
- 2 cups potatoes, peeled and cubed
- 2 cups fish or vegetable broth
- 1 cup heavy cream
- 1 tsp thyme
- Salt and pepper to taste
- 2 tbsp butter
Instructions
- Cook bacon in a pot until crispy. Remove and set aside.
- Add onion to the pot and cook until soft.
- Stir in potatoes and broth. Simmer for 15 minutes.
- Add fish and cook for 5 more minutes.
- Pour in cream and butter. Stir gently.
- Season with thyme, salt, and pepper.
- Serve topped with crispy bacon.

- Use firm white fish like cod or haddock.
- Add corn or celery for extra flavor.
- Reheat gently to avoid curdling.
