Ingredients

  • 4 large eggs
  • 1 cup cottage cheese
  • 1/4 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 tablespoon chopped fresh chives

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a muffin tin or use silicone muffin cups.
  3. Blend eggs, cottage cheese, salt, pepper, garlic powder, and onion powder until smooth.
  4. Stir in shredded cheddar cheese and chives.
  5. Pour mixture into muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes until set and lightly golden.
  7. Let cool slightly before removing from the tin.
