- 4 cups corn kernels (fresh or frozen)
- 2 tbsp butter
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 lime, juiced
- 2 tbsp chopped fresh cilantro
- Salt to taste
Instructions
- Heat butter in a large skillet over medium heat.
- Add corn and cook for 5-7 minutes until slightly charred.
- In a bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
- Pour the sauce over the corn and stir well.
- Sprinkle with cotija cheese and cilantro.
- Season with salt and serve warm.
Notes
- Use fresh corn for the best flavor.
- Adjust spice level by adding more or less chili powder.
- Store leftovers in an airtight container for up to 3 days.
