Ingredients

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 large onion, sliced
  • 4 hoagie rolls, toasted
  • 8 slices provolone cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken, salt, pepper, and garlic powder. Cook until no longer pink, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add bell peppers and onion. Cook until softened, about 5 minutes.
  4. Return chicken to the skillet and mix with the vegetables.
  5. Divide the mixture among the hoagie rolls and top each with 2 slices of provolone cheese.
  6. Place under a broiler for 1-2 minutes until cheese melts.
  7. Serve immediately.
