- 1 cup long-grain white rice
- 1 3/4 cups water

- 1/4 cup fresh cilantro, chopped
- 2 tbsp lime juice
- 1 tsp lime zest
Instructions
- Rinse the rice under cold water until the water runs clear.
- Heat olive oil in a saucepan over medium heat.
- Add the rice and cook for 2 minutes, stirring frequently.
- Pour in water and add salt, then bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, then stir in cilantro, lime juice, and lime zest.
- Serve warm.
Notes
- Use fresh lime juice for the best flavor.
- For extra flavor, add a minced garlic clove when cooking the rice.
- Adjust salt to taste.
